In summer time this is great with anything on the barbeque, fresh, healthy and quick to prepare. An easy throw together salad that can be adjusted according to your requirements.

How to Make this Lettuce Tomato and Cucumber Salad
Quick and easy to prepare, basically just chop the handful of ingredients, sprinkle with the olive oil and vinegar vinaigrette and toss together. To prepare the vinaigrette just mix olive oil, white wine vinegar, garlic and salt with some herbs in a jar with a sealable lid, shake well. Wash all the ingredients. Chop the lettuce cucumber, tomatoes and red onion. Place the lettuce in a big salad bowl, add cucumber tomato and red onion. Sprinkle with the simple vinaigrette or just with some olive oil, toss.

Making a Simple Vinaigrette
This easy vinaigrette is made by mixing the ingredients below well by shaking in a jar, just make sure the lids seals well and shake.

Variations in this Lettuce Salad with Tomato and Cucumber
This throw together salad can be altered by adding your favorite ingredients; olives, feta cheese, bell pepper, avocado cubes, capers, celery and corn are popular additions – Mediterranean Cucumber and Tomato Salad
Add some Cheese
Feta Cheese, Goat Cheese and Mozzarella Cheese all work great in this salad. Mozzarella Cheese is a lower salt healthy cheese option that is relatively low in fat and calories.

The easiest option for a salad dressing is to use just plain extra virgin olive oil, it works perfect. Already made Italian Vinaigrettes from various brands are available in most supermarkets and is a good another easy way to go.
Lettuce Tomato and Cucumber Salad Ingredients
Lettuce, cucumber and tomato are the main ingredients in this salad and is a great base if you want to ad some more ingredients.
Lettuce – we like to use nice crunchy iceberg lettuce in this salad, Iceberg lettuce is the most common lettuce in the supermarket, plain, simple lettuce. The sweet, buttery flavor of Butterhead lettuce, the mildly bitter flavor of Romaine lettuce and the peppery taste of Arugula all work well.
Tomato – any kind of tomato can be combined with cucumber and lettuce in this salad, we like to use cherry tomatoes and cut them in half. If you use a larger salad tomato, chop up two medium to large size tomatoes.
Cucumber – this is the main ingredient, we love the fresh and crispiness of cucumber. The mild English cucumber with it’s small pits and thin skin is convenient to use without peeling or pitting. If you use Garden cucumbers we recommend removing the skin and pits.
Onion – Red onions is delicious in salad, being sweeter and more mild than brown onions. The milder flavor of spring onions also works well.
Herbs – parsley and basil combines well with tomato, big pieces of basil leaves is great in this salad. Also see our Tomato, Feta and Basil Salad. Fresh dill, chopped is also good on this lettuce tomato salad.
Vinaigrette – this simple vinaigrette tastes great. A supermarket bought Italian dressing or plain olive oil will also work well.
How long does the lettuce salad last?
Lettuce does not last very long, it wilts quickly so this must be served fresh. This cucumber, tomato, lettuce salad is best served within first 30-60 minutes after tossing.
Traditional Lettuce Tomato Cucumber Salad
Ingredients
- 300 grams cherry tomatoes (halved) – 2 cups
- 300 grams cucumber (chopped) – 1 large fruit
- 300 grams lettuce coarsely chopped
- 40 grams red onion chopped (1/4 cup)
- 8 grams parsley (chopped)
Simple Dressing
- 30 ml extra virgin olive oil (2 tbsp)
- 15 ml white wine vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dry oreganum
