Keto Cucumber Salad

This keto cucumber salad is based on a German cucumber salad (Gurkensalat), a simple, delicious, refreshing summer salad that is low carb and keto friendly.

Ingredients
  

  • 275 grams cucumber (1 medium sized fruit)

Salad Dressing

  • 80 ml sour cream (1/3 cup)
  • 1 tbsp white vinegar
  • 1 tbsp olive oil
  • 1 tbsp dill chopped
  • 1 gram garlic powder (1/3 tsp)
  • salt and pepper to taste

Instructions
 

  • In a bowl prepare a dressing by stirring together the following dressing ingredients; sour cream, white vinegar, olive oil, dill, garlic powder, salt and pepper.
  • Thinly slice cucumber and red onion into a large bowl.
  • Cover in the mixed dressing ingredients.
  • Toss the cucumber, red onion and dressing together until the salad is well coated
  • Refrigerate and allow to sit for one hour before serving (can last 2 days in the refrigerator if all ingredients are fresh). The salad is more crispy and nice if it is fresh.
