Mango Cucumber Salad

Combining tropical mango flavors with fresh crunchy cucumber, a little bit of chilly spiciness, splashed with a lime and olive oil dressing combines in a delicious summer salad.

Ingredients
  

  • 200 grams mango diced (2 fruit)
  • 200 grams cucumber slices (1 fruit)
  • 50 grams red onion chopped (1/2 onion)
  • 100 grams 1 bell pepper diced

Lime Vinaigrette

  • 20 ml lime (x1 juiced)
  • 15 ml apple cider vinegar (1 tbsp)
  • 30 ml olive oil (2 tbsp)
  • 1/2 tsp chili flakes

Instructions
 

  • Slice two mangos into cubes.
  • Slice a cucumbers and cut the slices in half.
  • Chop up the bell pepper.
  • Cut half a red onion into slices.
  • Chop up red chilly.

lime vinaigrette

  • Prepare the dressing by mixing the following dressing ingredients through shaking in a jar with a well sealed lid; lime juice, apple cider vinegar, olive oil, salt, pepper and chili flakes.

Make the salad

  • Add the cucumber, mango and red onion to a large salad bowl.
  • Sprinkle with the lime vinaigrette and toss
